How to avoid rails 7.0.1 'new' to fetch newer rails gem version

Question

At first I installed rails 7.0.2.2 but then I had to change to rails 7.0.1 due to business requirements, somehow, rails insists on fetching rails and railties 7.0.2.2 whenever I do a rails new myApp I did follow all the steps I found at Uninstall Rails completely Still get rails 7.0.2.2 when the new bundle is installed, I tried many things, at the end I had to install rvm in macOS Monterrey and forget about asdf... I would like to know how can I prevent this behavior with rails. Thank you.
